Beat together the mascarpone cheese and the sour cream, cold from the fridge, together with the vanilla seeds from the pod for 5 minutes, until we obtain a become a frothy cream. Add the zest and juice from an orange and mix gently then add 1-2 tablespoons of Green sugar (natural extract of stevia), according to your taste. I only used a spoonful, I don’t like it very sweet, but you can still add another spoonful if you like it sweeter.
Mix and then put the cream in glasses, ice cream cups, small bowls, whatever you have available. Decorate with slices or orange zest, whipped cream, as per your own imagination.
Allow to cool for at least 2 hours before serving, ideally it should be left in the fridge overnight so that the flavours have the time to fuse into each other
A TRICK: If you want to obtain beautiful cups, I recommend you cut the corner of a bag, about 1.5 cm wide, put the cream inside and then make cream circles like small fir trees.
This cream can be made with instant coffee, cocoa, coffee, lemon, clementines, walnuts, almonds or any other fruit you are allowed to eat. But the fruit should not contain any sugar, so no fruit from jams or compotes! ANOTHER TRICK: Add a dash of cinnamon and / or star anise to the cream and the taste will be even more special.
This cream is absolutely delicious for absolutely all tastes and it can also be prepared for guests. If you won’t tell them, your guests will have no idea it doesn’t contain any sugar! Green sugar doesn’t have the strange taste other sweeteners generally have.
